After BBC's Rick Stein visited our restaurant, frizz and the Cambodia Cooking Class were again selected for a television show.
This time it was Channel News Asia to film our chef Heng, while he prepared the signature Cambodian dish Fish Amok.
Cambodian cuisine was featured on CNA's tv show 'Taste Matters' on July 11th, 2008.
The filming started on the rooftop terrace of the Cambodia Cooking Class, where chef Heng prepared two variations of Amok: the traditional one with fish and a vegetarian Amok, made with mushrooms.
Filming always takes a long time, as shots have to be done twice or three times. Hilarious was that the small bowl with coconut milk fell to the ground twice. Well, you can't have that on a television show, so do it all over again.
Meanwhile, Heng and showhost Marc Dass were talking about Cambodian cuisine and how it had changed over the years. Well, it hasn't changed a lot, although there are restaurants in Phnom Penh that give a new twist to traditional Khmer dishes.
Host Marc Dass was surprised to find out that Cambodian traditional recipes are at the root of Thai cuisine, as the Khmer empire ruled much of South East Asia, long before the Thai arrived.
When the amok was finally ready, we were far past lunch time and the crew felt really hungry.
Not only host Marc appreciated the Amok (“This is an outstanding dish!”), but the whole crew was delighted by its taste and fragrances.
Then the crew went to frizz restaurant to have lunch and take a final shot with Heng and Marc to enjoy our chef's famous creation of Mekong Fish Salad.
As the production manager was eager to know what the French influence had been on Cambodian cuisine, luk lak (tender beef cubes in gravy on a bed of salad, tomatoes, onions, and topped with a fried egg) was also served.
As showhost Marc was enthusiastic about the flavours of Cambodian food, we presented him with our cooking school's recipe booklet. Hope he can recreate the Fish Amok at home!
The show 'Taste Matters' is broadcast on Channel News Asia on Friday nights at 6.30pm Cambodian time (11.30am GMT).
The show is repeated the following Monday at 9.30am (2.30am GMT) and Tuesday at 1.30pm (6.30am GMT).
